Potato Rosti Stack Recipe
Jude’s Cooking Challenge: Week 2
Make a Potato Rosti Stack using what you have at home to make it interesting.
6 -8 potatoes
I large brown Onion
60 gm butter cubed
Salt and Pepper
Cooking oil
Paper Towels
1 egg (optional)
Step 1: Pre- heat oven to 100. (This is to keep the finished potato rostis warm).
Step 2: Wash and peel potatoes.
Step 3: Grate potatoes and onion into a bowl then add salt and pepper to season.
Step 4: Use your hands to squeeze liquid out of potato and onion mixture and place into a bowl.
Step 5: Cube 60gms of butter into a bowl.
Step 6: MIx in 1 egg to help bind the mixture. ( This is optional but it does help hold the Potato Rostis together).
Step 7: Put 1 cm of oil into a pan and heat on a medium heat. ( A caregiver must supervise this part).
Step 8: Place mixture into half of a measuring cup. Spoon half a cup of the mixture into the pan.
Step 9: Drop a cube of butter on each side of the Rosti. Flatten with a spoon.
Cook each side until it is golden brown.
(This will take from 4 - 8 minutes for each side.)
Place cooked Potato Rostis on a paper towel to drain.
Place Rostis in the oven to keep warm.
Take the frying pan off the element.Turn off element.
Prepare your topping
Mushrooms, cheese, salami, eggs, advocado, herbs,salmon, relish,ham, cream cheese, bacon or tomato.
Stack your Potato Rostis ready to serve and enjoy eating them!
Turn off the oven
Clean your dishes! (:
