Southland cheese rolls
The cheese roll is a legend in its own lunchtime. It's crunchy on the outside and deliciously melty on the inside. Made with fresh bread, tasty cheese, butter and a sprinkle of onion soup mix for seasoning, this down-home concoction is believed to be invented in Southland. Look for it when you're checking out cafes and places to eat in Invercargill, Gore, Bluff, Riverton and other Southland towns.

50 ml milk
1 T onion soup powder
60 g grated cheese
4 slices wheaten sandwich slice bread /or whatever bread you have
Butter or margarine - melted
Method
Lightly spread margarine or butter on one side of each slice of bread.
Mix the evaporated milk, soup powder and grated cheese together in a small saucepan.
Melt over a gentle heat, stirring until you have a thick smooth mixture.
Allow the cheese mixture to cool a little.
Spread a generous amount (not too thick) of the cheese mixture on the unbuttered side of the bread.
Roll the bread slices up into logs and then place on a lined baking tray.
Bake at 180°C for 5 to 10 minutes or until just golden brown. Serve hot!
Options:
You may like to add 2 T crushed pineapple or 2 T creamed corn
