Pasta Salad
Ingredients
Pasta: Steer clear of noodles and go for shorter shapes like orecchiette, rotelle, orzo, fusilli, farfalle, rotini or penne.
Vegetables: We used tomatoes and cucumbers, but you can really use anything. The goal is to add texture and colour. Toss in some thinly sliced bell peppers, marinated artichoke hearts, rocket or sliced spring onions. Should you wish to add a little heat, consider adding pepperoncini.
Cheese: Fresh mozzarella is easy to find, but you might wish to swap it for marinated mozzarella, feta or cubed provolone. Even the salty bite of shaved parmesan would be very tasty.
Protein: Bacon is always a hit with pasta but you could also add shredded chicken or cubed ham. If you're looking for a vegetarian option, why not rinse and add a tin of chickpeas.
Flavourful extras: Sundried tomatoes add both colour and flavour to this dish. Consider adding olives or pickled garlic, and toss in a handful of fresh herbs such as torn basil, oregano or dill.
Method:
For every 8 ounces of dried pasta, prepare 1lb of mixed add-ins
Ensure that at least half of your pasta salad ingredients are cheese, meat, or other savory ingredients.
Dress your pasta salad with about 3/4 cup of salad dressing for extra flavour should you wish to.
This week, the children in Cookery Club practiced their cutting and measuring skills. We organised the vegetables and mixed all the ingredients together until the children were happy with the results.
