Concentrator Course
Food & Nutrition
The Food and Nutrition course is a vegetarian cooking class that focuses on healthy eating. Students will learn cooking skills, kitchen hygiene, and various cuisines. All students must taste everything that is made in the class unless they have a medical document stating that they cannot eat certain foods. Students in Food and Nutrition will be enrolled in a three credit Skyline course entitled HTM 120 Sanitation Practices during spring semester. Students must satisfactorily complete the coursework and pass assessments to earn the college credit. Students who earn a D in the Skyline class will not receive credit for the class and it will remain on their college transcript. Additionally, students must satisfactorily complete all the e-portfolio assignments in order to pass the Food and Nutrition class. These assignments are a requirement for district CTE classes. Capstone Course
Culinary Arts
The Culinary Arts course is for students who took Food and Nutrition the previous year. Students in this class will take on leadership roles, which could include leading the Thanksgiving Pie Fundraiser, teaching students in the Food and Nutrition class particular dishes and learning how to make more complicated dishes. This class is also a vegetarian course. Students in Culinary Arts will be enrolled in two Skyline courses during the spring semester. One is HTM 124 Excellence in Guest Services and the other is HTM 125 Restaurant and Banquet Services. Two classes are worth 1.5 credits. Students must satisfactorily complete the coursework and pass assessments to earn the college credit. Students who earn a D in the Skyline class will not receive credit for the class and it will remain on their college transcript. Additionally, students must satisfactorily complete all the eportfolio assignments in order to pass the Culinary Arts class. These assignments are a requirement for district CTE classes.
