As the old saying goes, “When life gives you lemons, make lemonade.” Chef Thomas J. Long, CEC, AAC, executive chef at HACC, has made lemonade and so much more.
While the Chef’s Apprentice restaurant on HACC’s Harrisburg Campus remains closed due to the global pandemic, Chef Tom has been hosting cooking shows for students on Zoom. Documenting recipes from the show became part of the process, and one viewer suggested the creation of a cookbook.
The Chef’s Apprentice Cookbook – available for purchase just in time for the holidays – features over 80 recipes, including appetizers, soups, entrees, salads, side dishes and desserts. Some of Chef Tom’s prize-winning recipes from over the years are also included, such as his often requested crab cake recipe.

Five dollars from the sale of each cookbook will be donated to the Benjamin Olewine III Center for the Study of Culinary Arts and Food Service Management Fund for Excellence. This fund for excellence allows HACC to invest in innovative tools and technology to keep up with the constantly expanding culinary industry.
HACC is honored to be included as a site for COVID-19 vaccination distribution. The Pennsylvania Department of Health (DOH) is managing the entire process. This is not a HACC event.
We will be given limited notice of when these events will occur.
To limit the possibility of any COVID-19 exposure for our students and employees, and out of respect for DOH, on the dates of distribution, we will close the portion of each campus where the vaccines will be distributed. Students and essential workers approved to be on a HACC campus whose work or class schedules are affected by this event will be notified via email.
Please note: The vaccine is not for public access at this point in time. It is for a specific subgroup of individuals determined by DOH. Unless invited by DOH, no one is authorized to access the vaccination distribution site.
There will be a planned electrical outage at the Harrisburg Campus on Monday, Dec. 28, 2020, beginning at 6 a.m. and ending at 6 p.m. All buildings on the campus will be affected. The outage will allow PPL Electric Utilities Corporation and Heim Electric to install a new electrical meter located in the campus Switchgear Building. The emergency generator will keep the IT Data Center running. All internal partners have been contacted and our external partners, Head Start and U-Gro have also been notified. The HACC facilities team will be assessing emergency lighting in all buildings during the outage.
