Abstract:
This study is related to the pH level of a citrus fruit over time. This is important because if there is too much vitamin C, people could experience diarrea, gas, and abdominal pain. Vitamin C is important to health as well so if Vitamin C levels decrease over time, old oranges may not have as much Vitamin C. Previous studies have shown that a fruit loes acidity the longer it has been removed from the tree. The objective of this study was to see if I leave oranges in the refrigerator will the pH change over time. My hypothesis was if navel oranges have been off the tree longer, then the oranges pH increases. This was researched by buying 4 navel oranges from the grocery store. I will test one orange each week for 4 weeks. I will test the pH change from the same batch of oranges. The oranges will be stored in the refrigerator at a constant temperature. My data suggests that the pH increased during weeks 3 and 4, which means acidity decreased over time.
