I learned how to identify different disease states, as well as how to treat and counsel patients with individualized nutrition therapy. By completing this course, I gained perspective on how nutrition can assist with healing. I also improved my ADIME notes in this course by completing multiple case studies. In this course I interacted with other disciplines by participating in interdisciplinary case studies. Because this was my first medical nutrition therapy course, it strengthened my devotion to be a RD in a clinical setting.
I was able to interact with multiple dietitians through a 40 hour practicum at the Maple Grove Hospital in addition to the North Memorial hospital. This experience provided insight into a real hospital setting as a dietitian while incorporating medical nutrition therapy. I learned more in-depth information on disease states and practiced writing nutrition prescriptions. I accomplished many case studies for disease states while writing ADIME notes within a simulated electronic health record system. I developed and presented a seminar on the medical nutrition therapy for pressure ulcer wound healing, which strengthened my professional speaking abilities.
I gained awareness of the stages of the lifecycle and wrote ADIME notes for disease states that impact people of different ages. I was provided the opportunity to participate in interdisciplinary case studies to obtain real life experience diagnosing clients throughout the lifecycle. I obtained volunteer experience with Meals on Wheels. I gave an informational presentation on hydration importance to the elderly, and potassium importance to Cobber Kids, which revealed how to talk to different populations about nutrition. I became competent in creating child and elderly nutrition assessments through a diet record.
This course gave me the chance to understand nutrition in a complex way by focusing on the chemistry of how the nutrients work in the body. This then aided in understanding how the macronutrients and micronutrients are metabolized in the body. I completed a research paper on the associations between nutrition and Alzheimers Disease. I also formulated and talked through a vitamin lecture on Thiamin B1.
In this course I was introduced to macronutrients and micronutrients. I was able to learn the basics of nutrition which assisted in my interest to pursue a major in dietetics. I now understand how to use My Plate Supertracker and Minnesota Data System to track food intake. I completed a position paper on caffeine and the influence it has on the body.
Within this course, I was able to learn the basics on how food works when cooking. I tested out different properties of food by doing different experiments. The benefits from the consumption of food and the science of how food is formed is established from this course. I created a nutritional brochure for kiwi that was promoted in the dining center for students to access.
I gained management skills while serving as the manager for a themed meal for 50 people. I understand what it takes to run a business and the roles entailed. I gained sufficient knowledge on institutional equipment. With taking this class, I obtained the Manage First certification from the National Restaurant Association Educational Foundation.
Throughout this course I acknowledged the strategies needed to manage a food service operation. Got accredited with the ServSafe Certificate that goes through sanitation measures and all the information needed to run an institution to keep food safe. Drew out a institutional kitchen design for a nursing home, developed an equipment request, and developed a cycle menu.
*I anticipate completing this course by spring 2019. I am prepared to create community education lessons and formulate a grant. I intend to get a better understanding of how a community dietitian practices.
