Opportunities represent money coming in to CAC. Each opportunity record is connected to the account that will give the money, and to the contact, where appropriate, via opportunity contact roles. (In the 1:1 model, the account that gives an individual donation is the account with the same exact name as the Contact.)
Each donation or grant is an opportunity record. When the budget is completed each year, opportunities are created/imported, which results in the fundraising pipeline.
Payments are detail records representing one or more payments on an overall donation or grant and are part of NPSP. As of January 2021 (the time of writing), the Payment object is hidden on page layouts and is not being used. Opportunities are simply Open or Closed.
Opportunity Naming Convention
CAC has automation in place beyond the NPSP that ensures a consistent naming convention for all new opportunities. Any opportunity with a close date after 3/2/2020 that is not a grant, upon save, will have the following naming convention automatically applied:

Opportunity Record Types
CAC has four opportunity record types, used to control which fields show up on a record page.
Donation - Donations of money (almost all by individuals).
Matching Gift - Donations from a company, spurred by an individual's donation.
Grant/Contract - Foundation money, grants, & contracts.
Sponsor - Greenfest or Run sponsors and vendors.
501c4 Donation - A donation to the Clean Air Action Fund (501c4)
