1. Can students keep opening an assignment without submitting?

Yes, students don’t need to press “Turn In” for you to be able to see their work in real-time. They can also press “unsubmit” to get their work back. Submitting Assignments

2. My email has many Google Classroom notifications, can I turn these off?

3. Can the Chat feature be turned off in Google Docs assignments in Classroom?

No, the feature can not be turned off. We suggest you “Make a copy” for all your students in when assigning the Doc in Google Classroom.

You could also publish the Google Doc and share the link out to students through Classroom.
