TOOLS YOU NEED (Let Us Know if you don't have any ASAP aka by Tuesday):
-Oven
-Pie Pan/baking Sheet/Rimmed Baking Pan/Cast Iron Skillet
-Rolling Pin/Wine or other Tall Alcohol Bottle without indentations
-Measuring cup (1/4, 1/3, 1/2, OR 1 cup)
-Tablespoon measure and Teaspoon measure OR 1/2 Tablespoon or 1/2 Teaspoon or spoon
-Fork
-Sharp Knife
-2 Large Bowls
-Clean table/counter space to roll dough out on (at least 1 foot by 1 foot)
All Butter Pie Crust
2-1/2 cups all-purpose flour
1 tbsp granulated sugar
1 tsp sea salt
1 cup (2 sticks) unsalted butter, very cold
1 tbsp apple cider vinegar (optional)
About 8 tbsp ice water
1 Egg (for egg wash)
Filling:
5-6 Apples (Granny Smith, Gala are both good options), thinly sliced
1/2 Cup Sugar
OPTIONAL: cinnamon, nutmeg, lemon, allspice, ginger (dried or fresh), cloves
Prepare the bottom crust: Remove one disk of dough from the fridge. Wait about 5 minutes for the dough to warm slightly and become pliable. Meanwhile, generously butter the pie pan. Set aside.
Roll out two 9" pie crusts
Gently transfer the dough to your buttered pie pan & forms edges. Place in the fridge.
Prepare the filling: In a large mixing bowl, stir together the 1/2 cup sugar, sliced apples, and sprinkle a couple tablespoons of flour in. Put in optional spices if you want now. Set aside for at least ten minutes.
Fill the bottom crust with the apple mixture. Place the pie in the refrigerator to chill for 10-15 minutes (not necessarily necessary)
Bake the pie: Preheat the oven to 400 degrees F. Brush the pie pastry with the egg wash and sprinkle with sugar (if using). Bake for 20-25 minutes on the bottom rack of the oven until the crust is golden brown. Turn the oven temperature down to 375 degrees F., move the pie to the middle rack, and bake for an additional 20-25 minutes until the filling is bubbly and the pie is golden brown and cooked through. Use a pie crust shield or aluminum foil tent as necessary to prevent the crust from burning.
