Spinach Salad with Balsamic Dressing

This has been a staple in the Pinch kitchen forever. I like adding thinly sliced button mushrooms, too.

INGREDIENTS

4-6 cups washed baby spinach

2-3 thin slices red onion, halved

3 T balsamic vineagar (Colavita makes a good basic)

3 T extra virgin olive oil

1 t honey or sugar

pinch kosher salt

few turns fresh ground pepper

METHOD

Combine balsamic, olive oil, honey or sugar, salt, peper and red onion in a large bowl. Rinse lettuce and spin well. Toss in dressing and serve.
