I learned how to make fudge from my mother as a child and continue to make it now using a modified version of her recipe. One of the things I thoroughly enjoy is figuring out what and how I can substitute to make fudge for people who have dietary restrictions. So far I have found methods to make fudge that is dairy-free, chocolate-free, low-sodium and low-fat. I'm currently experimenting with alternative sugars for a keto/low glycemic index friendly fudges. Should you see me at an event, especially a camping event, I will likely offer you some ... repeatedly! I am totally not an enabler and pusher of delicious chocolaty goodness!
