How much meat am I getting with a quarter (half, full) beef?
*Because we do not have a scale on the farm, we can only approximate a steer's weight when we send it to the butcher. Most end up being between 1,300 and 1,500 pounds.
-Hanging Weight is what the butcher has after the animal has been slaughtered. The hanging weight is usually about 60% of the live weight. So if a steer weighs 1500 lbs live weight, its hanging weight will be 900 lbs (450# hanging weight for a half animal, 225 for a quarter).
- Your packaged meat ends up being about 60% of the hanging weight. Therefore, 900 lbs hanging weight yields 540 lbs of packaged beef to take home for a full animal ( 270 lbs for a half, 135 lbs for a quarter).
Where do I pick up my beef once it's ready?
The butcher will call you and you'll pick it up from their meat market, Alsleben Meats in Glencoe, MN.
Who do I pay and when do I need to pay?
When you go to Glencoe to pick up your meat, you will be writing two checks. One to Alsleben Meats for the butchering, and one to Gongoll Farms/ David Gongoll for the beef.
Is this grass-fed beef?
Our animals do eat hay and grasses, but they also receive corn as soon as they arrive on our farm. This promotes better marbling throughout the meat, compared to other farms that feed corn for the last 2-3 months.
