for garlic mushroom muffins add 6 sliced button mushrooms, 2 chopped cloves of garlic and a pinch of parsley
for spinach, red pepper and paprika muffins add a handful of spinach, 1/2 sliced red pepper and 1 tsp smoked paprika
for broccoli and red onion muffins add handful of cooked broccoli and 1/2 thinly sliced red onion.
or add vegetables of your choice.
Method
preheat oven to 160/ GM 4 and spray a muffin tin with oil.
whisk eggs well, and add some seasoning
you may wish to fry your vegetables if you like a softer texture.
divide vegetables between the 12 muffin tins holes, then top with egg.
bake for 20 minutes. Serve hot or cold.
Lemon & Blueberry Baked Oats
Ingredients
40g oats
175g natural yoghurt
1 tsp vanilla extract
1 tbsp granulated sweetener
1/2 lemon - zest and juice
2 medium eggs (1 medium egg if your prefer a dry texture)
50g blueberries (you could substitute with other berries)
Method
preheat oven to 180 or GM 6
put all of the ingredients in a bowl, but keep back 1/4 of the blueberries.
mix ingredients together, then pour into an ovenproof dish.
place remaining blueberries on top, bake for 35-40 minutes.
Carrot Cake Overnight Oats
Ingredients
40g oats or crushed weetabix
175g pot of vanilla yoghurt
1 small carrot, grated
1/4 tsp mixed spice
1/4 tsp ground ginger
1/4 tsp ground cinnamon
Method
put the oats/weetabix in the bottom of a jar (or a small bowl).
spoon the yoghurt on top, and 3/4 of the carrot, then the spices. Mix well.
Cover and chill overnight
the next morning, stir and top with remaining carrot.
Hash Brown Breakfast Bake
Ingredients
2 baking potatoes, peeled and diced into cubes
250ml water
cooking spray
1 large onion, finely diced
8 bacon medallians, chopped in to small pieces
8 mushrooms, sliced
1 tsp worcestershire sauce
sea salt and pepper
400g baked beans (one tin)
1 tsp garlic granules
2 tsp onion granules
Method
preheat oven to 200 / GM 7
put potatoes in a microwave with water, and microwave for 7 minutes
spray frying pan with oil, add onions, bacon, mushrooms and worcestershire sauce. Fry for 5 minutes, or until bacon is cooked and onions have softened.
spoon bacon mix into an ovenproof dish, then pour baked beans over the top.
once potatoes are cooked through, but still holding their shape, drain them.
Coat potatoes with cooking spray, and sprinkle with garlic and onion granules.
Place potatoes on top of baked beans, bake for 15 minutes, or until potatoes are golden and crisp.
Pancakes
Ingredients
300g self raising flour
1 tsp baking powder
1 tbsp caster sugar
2 medium eggs
1 tbsp of maple or golden syrup
300ml milk
Method
whisk together the flour, baking powder, sugar and eggs until smooth.
add the syrup and milk while whisking
heat a splash of oil and a small knob of butter in a frying pan until sizzling
add spoonfuls of batter to make pancakes the size you would like.
cook until bubbles start to form on the surface, then flip and cook the other side.
