The ground beef comes 80/20 lean to fat. All cuts that aren't selected on cut list will be ground up into ground beef.
Meat is located between bones and are best cooked braised or on the grill over indirect heat.
The ultimate smoking meat. Comes either whole or cut in 1/2.
Unlike Beef Ribs, in Short Ribs the meat is located on top of the bone. They are best slow cooked to tenderize the meat.
