Our goal is to make the ordering process as easy as possible. We hope to arm you with all the information needed to make the best choices for your family.
To order your beef you can send us an email at WalkingCBeef@gmail.com. The information needed will be Half or Whole, Name, and Phone Number.
After all orders have been placed we will send you a cut sheet that corresponds with your selection of a half or whole beef. On this sheet you will be able to select all the cuts you wish to recieve from the butcher. We will need the sheet filled out and back to us the day before dropping off the steer.
Payment for your beef and processing of the beef are seperate. Our beef is priced at a market price on the hoof (animals live weight). They are subject to change so please don't hesitate to reach out and ask if it is not listed. We do require a $100 down payment to hold your spot but it does come out of your total. We will accept cash, check or can send an invoice through Paypal. You will pay Southern Integrity Meats on day of pick up a processing fee of $35 (whole)/ $17.50 (half) along with $.75/lb (Prices are subject to change at Southern Integrity Meats discretion). on the hanging weight* (The weight of the steer after it has been field dressed but before it has be dry aged, cut, packaged, and frozen).
On the day of drop off we will weigh the steers before loading on the trailer. After drop off we will create the invoices to be sent out. We do ask that all bills be paid off within 7 days of dropping off the steer (We will accept a mailed check if you are comfortable sending one).
Southern Integrity Meats will call when your beef is ready for pickup which is typically 14 days. At pickup the fees mentioned above will be due to the butcher (they only take cash or check). After pickup it is yours to enjoy! Be sure to leave us some feedback on what you think of our beef!
Below is an example of how to get an estimate on the price of a whole beef. If wanting to see a half just split total in half.
Calculating on hoof price
We typically try to process our steers around 1200 lbs.We will say the market price is $2.30/lb (Market Price is what steers are bringing as of 8/1/2023 at Pulaski Stockyards. Prices are subject to change due to market).
1200 lbs. x $2.55/lb.= $3060 (Total owed to Walking C at drop off)
Calculating Price for Processing
Hanging weight is roughly 60% of the live weight.
1200 lbs. x .6 (60%)= 720 lbs.
720 lbs. x .75 (Processing Fee) = $540 + $35= $575 (Total owed to the processor at pick up)
Calculating Price per Pound
Take home weight is roughly 60% of the hanging weight though that is dependent on the cuts chosen. It is not an exact measurement.
720 lbs. x .6 = 432 lbs. of meat
$3060 + $575= $3635
$3635/432 lbs.=$8.41/lb.
