One problem we identified was polystyrene lunch trays in our cafeteria. We made a few phone calls and sent a few emails, and within a few days our problem was solved. This was great, but what would we work on for the rest of the year? That’s when we came up with our second problem: local businesses using polystyrene clam shell boxes.
Jill Dunn, the Food Service Program Director for our school district, was an important piece to our switch from plastic trays, this happened when Lab School student contacted her for an interview. The call reminded the food services to switch back to reusable plastic trays. She explained that the use of plastic trays in the first place was mainly because there was construction that blocked the truck with the reusable trays from getting close enough to the school. She talked about how plastic reusable trays cause more food waste, since they are bigger and more food is being put on them.
Part of the Polypuncher team collected data on our school's food waste. They found that in one week our school wasted 92.5 pounds of food!
