5-6 etrogim 2 C sugar
750 ml 100-proof vodka 2 1/2 C water
1 vanilla bean
Pour 375 ml of vodka into a glass jar with vanilla bean. Zest etrogim over jar so zest falls in immediately. Make sure to get zero pith in the jar. Cover jar and let sit at room temperature in a room that's cool and dark for 10-40 days. In saucepan, combine sugar and water. Cook until mixture thickens (about 6 minutes). Let cool. Add to jar. Rest for 10-40 more days. Strain and pour into desired container.
The liquor is best served chilled.
