4 etrogim 3 C Sugar
5 qt cold water 1/2 C hot water
Cut into multiple vertical pieces and remove pulp and seeds. Cover slices with 1 qt of cold water, bring water to a boil, then drain. Repeat four times. Add 2 C sugar and hot water in a saucepan and heat on medium-low. Stir until sugar dissolves. Add peels and boil for about 30 minutes until clear and looks like candy. Make sure peel doesn't stick to bottom. Remove from heat and let stand for 4 minutes. Allow syrup to drip off of peel, then coat thickly with leftover sugar.
Can be used as a garnish for a beverage.
