2 etrogim 3 1/2 C sugar
1 C water
Puree entire etrogim. Add to a bowl of 2 C sugar and the water. Bring mixture to a boil on a stove. Turn off stove and let mixture sit for half an hour. Strain mixture to remove chunks. Add another 1 C of sugar and let it dissolve. Put parchment paper on a cookie sheet and put a thin layer of sugar on the top. Put mixture on stove and boil again for around 5 minutes until it reaches 300° F. Test mixture by dropping a small amount into cold water. If it hardens and becomes brittle, put small globs of the mixture onto the parchment paper and dust the top of the drops with the sugar in the sheet while it hardens. Let it cool then serve.
