Platforms/Levels:
In Cheese Jump, the truckle jumps on platforms. The platforms are randomly generated and slowly get farther apart until a point. The platforms also change colors as you go on (about every 350 score); these color changes are referred to as "Levels". The colors of the platforms change to their inverted counterparts in reverse mode.
In Cheese Maze, the colors are used for the color of the walls of each level, as well as to make everything else in the game (Easter eggs, title screen, truckle, etc). The only things in Cheese Maze that do not use these colors are the pictures in the credits.
In Cheese Roll, the colors are used for the color of the walls of each level and the truckle.
Italic colors are repeated elsewhere.

History:
The platforms were added in Basic Doodle Jump, the base code for Cheese Jump. In "Basic doodle jump" (Modified), Ian noticed that he kept dying at the point where the platforms would get too far apart and you couldn't skip them anymore. His solution was to make the platforms turn blue (Turquoise {#41d9d4}) when this happened (about 4500 score). He decided that he liked the changing of platform colors so he added a change at;
10,000 score (Lavender {#b886e3})
and 15,000 score (Sahara Sand {#edeB79}).
(Keep in mind that the scoring was different at this stage.)
Later in "Less basic doodle jump", Ian added a color change at;
20,000 (Pink {#db7995})
25,000 (Coral Tree {#ab6565}),
30,000 (Tacao {#edbc80}),
35,000 (Storm Dust {#636262})
and at 40,000 (Smokey Grey {#707070}) score.
All of these colors are the same today, with the addition of one more color, Charcoal Grey (#404040).
In beta, Seth redesigned the scoring system to be more reliable. Now your score is the number of platforms you have passed. The scores at the level changes are;

Then, when Cheese Maze was made, it used the same color palette. But Ian had not yet updated this page with some of the colors, so Cheese Maze does not contain most of the sprite colors and the mushroom colors. Cheese Roll also used the unfinished color palette.
