Winter 2020
Due to COVID this internship experience was cut short. However, in the little time that I was there I was able to learn from their dietitian Samantha Fuhrman, what she does, how she works with athletes, and what common problems she faces. I was able to interact with the athletes, help make healthy snacks, and learn more about the sports nutrition field.
Summer 2020
This was one of my favorite opportunities I have gotten as a student. I worked with a good shelf manage by my church in Grand Forks, ND by helping them reorganize and create information for not only their customers, but also their volunteers. I helped create a gluten free section, labels for what would be good choices for someone with heart disease or who might have T2DM. I was also able to create handouts for patrons to use to help them select good food for them as well as recipes for less common foods that the food shelf had. I learned a lot about food shelves themselves, and grew a deep passion for helping a community.
Summer 2021
Through this internship I was able to work with Family Wellness Summer camp and the kids attending the camp. I created fun, healthy snack for the kids, and through this also introduced some of them to knew foods or fun, tasty ways to incorporate fruits or vegetables into their meals. I had a lot of fun working with the younger age group and getting exposed to what working in a classroom is like.
Through basketball at Concordia I had the opportunity to help CCRI an assisted living home for people with disabilities with their annual Halloween carnival. Our team helped run games, interact with the patrons of CCRI and have some fun! It was a great opportunity to work with and learn more about people I do not always get to have interactions with. It was fun to see the tenants having fun getting excited when they won and letting loose on the dance floor.
I was able to help serve the Fargo/Moorhead community through volunteering at the Great Plains Food Bank, helping to stock shelves, load trucks with boxes, as well as work at a few of their food shelves, assisting patrons with selecting food, weighing carts, and giving back to the community. I have an interest in working with my community as a dietitian and volunteering in these ways was a great opportunity to get out meet members of my own community and learn more about others. My favorite thing is to hear the stories some of these patrons have seeing the impact that I can have on my community.
