All of the good Java projects! My best and most recent one is SEPience - an educational platform, that uses an innovative way of simulating objects in behaviour, as observed in the real world.

The theme was Future and we created the epic game Neon Velocity. I was the lead developer. I also created some of the music & took the role of a level design to design one of the levels.
