1c orange juice
1 whole orange with rind still on, chopped
1 apple, cored
1 lb cranberries
16 dried apricots
1.25 c honey
1/2 ground cardamom
Boil the orange juice, apple, orange, and cranberries. Add the remaining ingredients and cook until it thickens. Cool. It will thicken a bit more when cool.
Makes approx. 5c.
1c cornmeal
1c flour
1 tbsp baking powder
1 tsp salt
2/3 c maple syrup
2 eggs
1/4 c butter
1c milk
1/2 c corn
Mix together and bake at 350.
1 tbsp olive oil
2 tbsp fresh ginger
2 garlic cloves
1/2 c honey
1 can crushed pineapple
1 tbsp paprika
1/2 onion, diced
1 lb black beans
2-3 bay leaves, whole
1 onion, diced
1 red pepper, diced
1 tbsp salt
1 tbsp cumin
1 tbsp oregano
1.5 tsp cayenne
1 tsp black pepper
2 cups native American wild rices
3 cups water or vegetable broth
Chopped cilantro.
Soak beans overnight. Cook beans with water and bay leaves and salt. Cook on low until beans are soft. Saute onions, pepper, and garlic in oil. Add spices. Add uncooked rice and allow it to toast a bit. Add water or vegetable broth. When done, fluff rice. Sprinkle with cilantro.
