2023 grapes are Harvested!

There were 89 clusters harvested in 2021 and the sugar level exceeded the target which was 24 brix. There was a bit of issue with controlling the temperature during the primary fermentation. It went up too high with the top closed. I will put just a cloth next time so that heat will go away. Because of that the color is lighter and less tannin.
After having French oak chips left in the bottle for one year and three months, we bottled the 2021 grape wine in November 2022. Just like racking the wine we put a glass container on a higher place and the bottles on the floor then siphoned the wine into the bottles. There are two containers, one gallon and 750cc, which are to be distributed to the 750cc bottle evenly so that each bottle has the same taste.
I had not successfully bottled the wine without spilling some on the floor but this time I did for 12 bottles perfectly.
The last process is to cork the bottles. I needed to hold a bottle with my legs and push the cork with a corker. Corks have to be soaked with hot water for 30 minutes so that I can push them in smoothly. I still need to push very hard.
We tasted one of 12 bottles that night and stored 11 bottles in the underground storage. I like to age them at least two more years before starting to drink. The temperature of the storage was 61 degrees (F) on that day. On the coldest day of the winter it goes down to 54 degrees.
