As we learned from our study of Latin history, Latin came into existence in liturgical terms in the 3rd Century, as it began replacing Greek as the common language of the people throughout the Roman Empire. So it was the "vernacular" language of the time and began spread from North Africa across the West. And after the 8th Century when Romance languages started evolving away from Latin it maintained itself as the liturgical language of the Church; and it doesn't change, which is important, so that the precise theological meanings of the words can always be used for reference.
So for 1200 years Catholics still prayed in Latin, although they didn't speak it otherwise. One of the Church's greatest saints and spiritual masters, St. Frances de Sales stated in the 16th Century:

Exorcists unanimously report that demons hate Latin. Latin is the sacred language. The main reason it is a sacred language is because it was written on the cross of our Savior. It is also sacred because of its function as the language of the Church. The unity and universality of Latin represents an undoing of the Tower of Babel.
