In the 1950s, when food was in short supply after 3 years of the Korean War (1950-1953), the only leftover food they had was processed meat from the US military bases.
A restaurant owner in the city of Uijeongbu (의정부), where the US military bases were located, used that excess meat to make a stew. That stew ended up being the 부대찌개 (Army Stew).
This stew quickly became popular around Korea.
The stew started off as a stir-fried dish with only meat, cabbage, and onions, but later on, anchovy broth with kimchi and gochujang (red pepper paste) was included to make the actual stew.
The stew was also named 존슨탕 (Johnson soup), which was named after the US president Lyndon B. Johnson. It was said that he loved the taste of 부대찌개.
