The umeshu is a representative japanese liquour, it's elaborated macerating fruits from the plum in a mix of alcohol and sugar. It is matured for a couple of months, or even years to extract it's components.
"Honkakku umeshu" or authentic is the one who preserves the aroma and natural flavour of the plums, without additives like acidulizers, colorants or flavorings.

Hakutsuru Nigori
白鶴 にごりゆず酒
Delicate , soft and subtle with less acidity. Light and clean body
Nigori type (not filtered). Uses juice and peel from the yuzu fruit. Perfect balance between biterness and depth of the flavor of these two.

Shochu is a distiled liquour. It is elaborated from various ingredients as 酒かす (sakekasu, sake fermented leftovers), 米 (kome, rice), 麦 (mugi, barley), o さつまいも (satsuma-imo, sweet potato).
It has more alcohol % in comparison to other fermented alcoholic beverages. It's flavor and characteristics vary depending on the ingredients and the distillation method.

"Iichiko Silhouette" is an authentic shōchū that intensifies the exquisite character of "Iichiko." The base shōchū is meticulously blended with one made using kōji and another aged in oak barrels. The result is a smooth spirit with a complex depth.
A luxury distillation process is used, employing only barley koji as the raw material throughout the entire preparation. By using the whole barley koji, a distillate with a smooth, deep, and rich flavor is obtained, revealing an intense umami. Senya Issui is an authentic sweet potato shōchū that stands out for its richness and depth. Made with select sweet potatoes and paying special attention to the water and koji, this shōchū reflects tradition and craftsmanship in its production process. Its flavor is subtly aromatic, smooth yet robust, with a perfect balance of sweetness and umami. It uses black koji (kurokōji) in its fermentation process. Black koji is known for its ability to develop complex and rich flavors and is fundamental in the production of shōchū with a deep flavor profile.

It is distilled at the distillery in Akita Prefecture, located on the coast of the Sea of Japan and extending east to the Ōu Mountains, Japan's longest mountain range. It is from these mountains that Etsu Double Yuzu takes its fresh and light aromas. Macerated for seven days using traditional botanicals such as Japanese yuzu, juniper berries, licorice root, angelica, coriander, and matcha. After maceration, only the gin is distilled, without the botanicals, allowing the oils to infuse. Only after the distillation process is fresh mountain water added, giving this gin its crisp flavor. The Etsu Pacific Ocean Water bottle is made from 100% recycled (PCR) glass. This process may result in bubbles and a rough texture known as "orange peel" on the glass, as well as some imperfections, such as colored lines and varying shades ranging from blue to green, giving the bottle a unique, organic, and authentic design, very similar to that of handcrafted glass.
