Avast, me hearties! Gather 'round as I spin ye a tale of the high seas and a pirate's quest for the most savory vegetable soup the world has ever known. Aye, this be the legend of Captain Carrotbeard and his crew of vegetable-loving buccaneers!
I....am not going to talk like that for this whole blog post. Anyway, if you've read my previous blog post about my uncle, you'll know he had to fight a giant carrot. After making some vegetable soup that was so good that the entire farmer's market clamored for more, he knew he had to write it down. So, my uncle wrote down the recipe and was about to add the last ingredient when the dastardly Captain Carrotbeard kidnapped my uncle.
One farmer in particular was so dedicated to finding the recipe for the vegetable soup that she decided to stage a rescue mission. She gathered up her fellow farmers and they set out to rescue my uncle. One brought a soup ladle, another brought spicy peppers, and yet another brough cheesecake. For what purpose, I'm not sure. The point was, they were armed and dangerous. Captain Carrotbeard was no one to be trifled with, for he had a furious temper.
They sailed through treacherous waters, with fog so thick it was practically soup (and probably was) and stumbled upon a hidden island. The island was shrouded in mist, and rumors whispered of a magical vegetable garden hidden within. Legends spoke of vegetables so fresh, they could bring a tear to anyone's eye. Even if the vegetable wasn't an onion.
As they trekked deeper into the jungle, they encountered a mysterious garden, that was carefully maintained.
There, in the center of the garden, stood a colossal pot, big enough to cook soup for all the farmers. And there was Captain Carrotbeard, guarding the pot with a ferocious glare. "Revenge," he sneered, "is best served cold."
The famers gathered into battle postions and began their attack, while the farmer who started the whole thing snuck to the cage where my great uncle was. But he was missing, and he left only the recipe in his place. The famer picked up the recipe. She had succeeded in her quest, but...she couldn't exactly leave my uncle. Even though she had what she came for, she decided to-
Anyway, this is the recipe! She managed to take a picture of it, and it's a pretty good soup. I'm not sure I would fight a carrot to get it, but that's alright.
Ingredients:
2 tablespoons olive oil
1 onion, diced
2 cloves of garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 potatoes, diced
1 leek, sliced
5 clue of chocolate}
2 tomatoes, diced
1 zucchini, diced
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried basil
Salt and pepper, to taste
Instructions:
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until golden and fragrant.
Add the sliced carrots, chopped celery, diced potatoes, sliced leek, diced tomatoes, and diced zucchini to the pot. Stir well to combine.
Pour in the vegetable broth, ensuring that the vegetables are fully immersed. If needed, add additional water to cover the vegetables.
Sprinkle in the dried thyme and dried basil. Season with salt and pepper to taste.
Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the vegetables are tender.
Once the soup has reached the desired consistency, remove it from the heat. Using an immersion blender or a regular blender, carefully purée the soup until smooth.
Return the pot to the heat and warm the soup over low heat for a few minutes. Adjust the seasonings if needed.
