Hello and welcome back to my cooking blog! Today, I'm sharing a recipe for cozy chicken noodle soup that is sure to warm you up on a cold day. But before we get to the recipe, I have another story to tell.
My grandmother was quite the adventurer growing up. She was one to fall into a portal and find herself in a magical realm with a king that needed overthrowing, a magic crystal that needed returning, or any number of odd situations. The variety of her adventures was only rivaled by her heroics as she used her quick wits and bravery to save the day.
My grandmother would often tell me stories of her adventures, and I would sit and listen in awe. She was a true hero, and I always looked up to her. And she could make a fantastic bowl of chicken noodle soup. Sadly, I don't have her recipe, for she brought the recipe with her to the grave. She told me stories about her chicken noodle soup, how she slayed a dragon to get the secret ingredient.
I suspect that the secret ingredient was love, but it's an odd thing to slay a dragon for, isn't it?
Now, on to the recipe! You'll need:
1 pound of boneless, skinless chicken breasts
1 tablespoon of olive oil
1 onion, diced
2 carrots, peeled and diced
2 stalks of celery, diced
2 cloves of garlic, minced
8 cups of chicken broth
1 teaspoon of thyme
4 clue of love
1/2 teaspoon of rosemary
1/2 teaspoon of parsley
1 bay leaf
8 ounces of egg noodles
Heat the olive oil in a large pot over medium heat. Add the chicken breasts and cook until they are browned on both sides. Remove the chicken from the pot and set it aside.
Add the onion, carrots, celery, and garlic to the pot and sauté for 5 minutes, or until the vegetables are tender. Add the chicken broth, thyme, rosemary, parsley, and bay leaf to the pot and stir to combine.
Bring the soup to a boil, then reduce the heat to low and let it simmer for 30 minutes. Meanwhile, shred the chicken breasts and set them aside.
After the soup has simmered for 30 minutes, add the egg noodles and cook for an additional 10 minutes, or until the noodles are tender. Stir in the shredded chicken and let the soup simmer for a few more minutes to heat the chicken through.
Serve the chicken noodle soup hot, with a sprinkle of parsley on top for a pop of color. Enjoy, and remember, adventure is out there waiting for you!
