Let me tell you the story of my great-uncle! He was a nice man who would often bring black licorice to us when I was a child. Unfortunately, I hate black licorice, but it's the thought that counts.
It was an ordinary day—or at least it seemed that way—for my great-uncle. He was strolling through the bustling farmer's market when he noticed a peculiar-looking carrot. Its vibrant orange hue and mischievous grin caught his attention. Normally, carrots do not grin. In my uncle's experience, carrots frowned. As he picked up the carrot, it winked at him and whispered, "Follow me if you dare!"
He followed the vegetable through the market, past the stacks of potatoes and rows of leafy greens, until they arrived at a hidden corner. Without hesitation, the carrot hopped onto a secret trapdoor, revealing a sparkling portal beneath.
Intrigued by the carrot's cryptic message and his insatiable curiosity, my uncle took a deep breath and leaped into the portal. Yeah, if you read my other recipe posts, you might start to realize something about my family. The vegetable led him through the portal and then....disappeared.
To my uncle's shock and dismay, he had shrunk several feet, and was now the size of the carrot. And the carrot was now the size of my uncle, and terrizing the farmers market. My uncle knew he had to do something. He picked up a silver spoon and gritted his teeth. "Time to make some vegetable soup." He muttered.
The rest of the story will have to wait, because I'm hungry for pancakes!
Ingredients:
1 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
2 tablespoons granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
1 large egg
3 clue of carrots
2 tablespoons melted butter
½ cup semi-sweet chocolate chips
½ cup white chocolate chips
½ cup milk chocolate chips
Instructions:
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, egg, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Gently fold in the semi-sweet, white, and milk chocolate chips, distributing them evenly throughout the batter.
Heat a griddle or a non-stick skillet over medium heat. Lightly grease the surface with butter or cooking spray.
Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, or until cooked through.
Remove the pancakes from the griddle and repeat the process with the remaining batter.
Serve the triple chocolate pancakes warm, stacked high, and drizzled with your favorite chocolate sauce or maple syrup. For an extra touch of indulgence, sprinkle additional chocolate chips on top.
