Yung-Tsung Chen, Ph.D.

Assistant Professor

Yung-Tsung Chen is an Assistant Professor in the Department of Food Science at the National Taiwan Ocean University, Taiwan. He trained as a microbiologist at National Taiwan University. Dr. Chen found that a probiotic strain, Lactobacillus mali APS1, isolated from sugary kefir, manipulated gut microbiota and metabolites, resulting in the reduction of body fat accumulation and improvement of hepatic steatosis via SIRT1/NRF2 pathway in his Ph.D. He then worked as a senior researcher at SYNBIO TECH Inc., a probiotic manufacturing company in Taiwan, and he focused on the research associated with functional probiotics development. His research interests include investigating the interaction between the gut microbiome and the host metabolism and the impact of synbiotic supplementation on metabolic syndrome.
