The Greener by Default Coalition at New York University (GBD@NYU) is a coalition of campus member organizations and endorsements, including departments, offices, and student organizations, committed to sustainable and inclusive food purchasing at NYU.
Our mission is to create a more sustainable, inclusive, and compassionate campus by advocating for, promoting, and implementing plant-based default menus across New York University.
Why plant-based defaults?
Making plant-based the default increases overall consumption of plant-based food through ease and appeal while preserving personal choice for diners.
Studies show that making plant-based meals by default reduces meat consumption by 53% to 87%. This means a 40% average reduction in greenhouse gas emissions and 24% less water use.
Over one year, an organization with 1,000 employees serving one meal per weekday plant-based by default can save over 9 million gallons of water and 350,000 kg of CO2e. That's more reductions than installing solar panels (and without paying for installation)!
