As a working Mom, I often have a set of "go to" recipes that are quick to make, especially on a week night. This recipe is a favorite of my son, Stephen, and his fiancé.
1 pound dry macaroni, cooked and drain according to directions on box
1 can Campbell's Cheddar Cheese soup
1 can milk
1/2 pound Extra Sharp Cheddar Cheese, grated
1/2 pound Mozzarella Cheese, grated
salt, pepper, garlic powder to taste
Preheat oven to 375F. Cook macaroni according to direction son box, drain. Meanwhile, in small pot combine Cheddar Cheese Soup, Milk, Salt, Pepper and Garlic powder. Heat over medium heat until it comes to a simmer. Remove from heat. Combine cheese sauce with cooked and drained macaroni. In a small bowl combine the grated cheeses (Extra Sharp Cheddar, Mozzarella & Parmesan). Layer the macaroni mixture in a greased (butter or olive oil) casserole dish, layers are 1/2 macaroni mixture, 1/2 grated cheeses, remaining 1/2 macaroni mixture, remaining 1/2 grated cheeses, crushed cheese crackers (optional) on top. Bake at 375 for 20-30 minutes until top of casserole is golden brown.
