Healthy Pumpkin “Pie”
1 roasted pumpkin, or 1 - 12 or 15 oz. can of organic pumpkin (high histamine, high lectin, high oxalate. Sub sweet potato becomes low histamine, high oxalate.)
1 can 100% coconut milk (tetra pack for low histamine)
½ cup maple syrup
1 ½ teaspoons pumpkin pie spice, or 3 if you are Katie (high histamine)
½ teaspoon vanilla bean powder, or 1 tablespoon vanilla extract
½ teaspoon grey sea salt or himalayan pink salt
2 eggs
Preheat oven to 425 degrees. Mix all ingredients together and pour into an 11x7 baking dish . Bake covered for 15 minutes, then lower the temperature to 350, and bake uncovered for 30-40 minutes longer. “Pie” is ready when a knife can be inserted cleanly into the center. Let cool before serving.
