Chawan mushi - Flan Japonais (Chawan : bol ou tasse)
LES INGREDIENTS
Eau, mirin, dashi, oeuf, poulet, poisson et shitake
LA RECETTE
- Chauffer eau à 70/80°.
- Dans un saladier mélanger oeuf (1 pour 2 chawan), mirin et dashi.
- Incorporer l'eau.
- Poser au fond de chaque chawan 1 graine de ginko (facultatif), 1 dé de poulet, 2 dés de poisson ou rien...
- Verser le bouillon .
- Poser le shitake flottant, entier ou en quart (pour plusieurs bouchées 😉).
Couvrir et cuire 10 minutes en cocotte à feu doux .
- Servir tiède.
PS : En décoration vous pourrez couper une fine bande de poireau que vous fendrez partiellement en deux dans la longueur, elle symbolisera une épine de pin.

THE RECIPE
- Heat water to 70–80°C.
- In a mixing bowl, combine the egg (1 egg per 2 chawan), mirin, and dashi.
- Stir in the water.
- Place the following at the bottom of each chawan: 1 ginkgo nut (optional), 1 cube of chicken, 2 cubes of fish, or nothing at all...
- Pour in the broth.
- Place the shiitake mushroom on top—either whole or quartered (for multiple bites 😉).
- Cover and cook for 10 minutes in a covered pot over low heat.
- Serve lukewarm.
P.S.: For a garnish, you can cut a thin strip of leek and partially slit it lengthwise; it will look like a pine needle.
