Items needed:
1 (10oz) pkg of frozen chopped spinach, thawed
1 (14oz) can artichoke hearts, drained and chopped
1/2 cup real mayo
1/2 cup grated parmesan
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon pepper
1 (17oz) pkg frozen puff pastry
Drain and squeeze moisture from spinach. Stir together spinach, artichoke and next 5 ingredients. Thaw pastry at room temperature for 30 minutes. Unfold pastry carefully on lightly floured surface. Spread 1/2 spinach mixture leaving 1/2 inch border on each of the two pastries. Roll jelly roll fashion. Press and seal seams. Wrap in plastic wrap. Freeze 30 minutes. Cut into 1/4 inch slices. Can be made up to three months in advance. Bake 20 minutes at 400.
Broccoli and Cheddar dip
Items needed:
1 (8oz) package of cream creese softened
1 (8oz) package of Hidden Valley ranch dry dip mix
1 (8oz) package of frozen chopped broccoli
1 (8oz) package of shredded cheddar
Thaw broccoli and then mix it together with the cream cheese and ranch dip. Pour into a square casserole dish and put the cheddar cheese over it. Heat about five minutes in the microwave until the cheese is melted.
Items needed:
2/3 c. butter
2/3 c. butter flavored Crisco
1 c. sugar
1 c. brown sugar
2 eggs
2 tsp. vanilla
3 c. flour
1/4 c. quick cooking oats
1 1/2 tsp. salt
1 tsp. b. soda
almost, 3 c. chocolate chips (the more the better – gives the cookies a better shape)
Blend butters and sugars until creamy. Add eggs and vanilla, just until blended. (Don’t over mix – will make cookies flat!) Add dry ingredients, except choc. chips. Once mixed, add chocolate chips. Drop cookies on cookie sheet (I use a Pampered Chef stainless steel scoop to do this). Bake at 375 for 8-10 minutes. DO NOT OVERBAKE!!!!! They may look light in color after the 10 minutes, but take them out anyway! They will be too hard when they cool if you don’t!
Items needed:
8 oz package of cream cheese
1/2 cup packed brown sugar
1/4 cup sugar
1 teaspoon vanilla
1 package of Skor Bar Toffee bits or Heath Bar Toffee Bits (you can also subsitute the chocolate covered bits)
4-5 Granny Smith apples
Mix cream cheese, brown sugar, sugar and vanilla well. Add toffee bits to taste.
Slice apples, dip and enjoy!!
Extras:
You can double the recipe for a large party
You can also use low-fat or fat-free cream cheese (sometimes if I double the recipe, I’ll use 1 package of low-fat or fat-free and 1 package of regular)
I always add a little bit more vanilla because I love it!
