We use ground lamb interchangeably with our favorite ground beef recipes like spaghetti meat sauce, stroganoff, burgers, meatloaf, and enchiladas. Depending on the ground beef you're used to, it may have a bit more fat. We'll drain some fat off after browning if we don't want it in the recipe.

It is forgiving to substitutions or omissions. I use roasted eggplant that we have frozen from the garden, tomato sauce instead of the canned plum tomatoes, and feta instead of goat cheese. I'm getting hungry thinking about it...
