Custom cut choices include:
Shoulder: roast, steaks, stew meat, or ground
Rack: roast, half roasts, or chops
Loin: chops, stew meat, or roast
Leg: whole bone in, halves bone in, stew meat, steaks, whole boneless, halves boneless
Shanks: wrap as shanks or add to ground lamb
Ribs: wrap as ribs or add to ground lamb
Ground lamb is also included, or you can special request stew meat only if you don't want ground
