Cinnamon Coffee Cake

6 Medjool dates, pitted and chopped

1 cup sour almond milk

1/2 cup applesauce

1 tsp. vanilla

1 cup white whole wheat flour

1/2 cup almond meal

1 T. baking powder

2 tsp. cinnamon

1/2 tsp. salt

Nut Topping

1 cup chopped walnuts

1 cup almond meal

1 cup date syrup

2 tsp. cinnamon


1 Using a blender, puree dates, sour almond milk, applesauce and vanilla.

2 Combine flour, 1/2 cup almond meal, baking powder, 2 tsp. cinnamon and salt in large bowl.

3 Add date mixture to flour mixture and stir thoroughly.

4 To make topping, combine walnuts, 1 cup almond meal, date syrup and 2 tsp. cinnamon in small bowl and mix well.

5 Spray 8” square pan with cooking spray.

6 Spread half of the batter into pan. Drop half of the topping evenly over the batter. Spread the remainder of the batter into pan. Take a knife and swirl nut topping into batter. Drop remainder of nut topping evenly onto cake.

7 Bake at 350º F for 20-25 minutes.
