Mr. Schmidt shows you how to make pretzels!
Ingredients
3 Cups Whole Wheat Flour
1 pkg Yeast
1 tablespoon Maple syrup
1 teaspoon Diastatic malt powder
1 can Liquid from can of chickpeas
½ cup water
Bath
10 cups Warm water
⅔ cup Baking soda
Flake salt or pretzel salt for topping We also like Trader Joe’s Everything But the Bagel Seasoning.
Mix Combine yeast liquids and maple syrup in a stand mixer, and mix with the paddle for one minute until somewhat combined (or just mix by hand with a wooden spoon).
Knead. Mix the flour, malt and mix with paddle attachment till just combined. Change to the dough hook and on low speed(#2 on my Kitchen aid) and knead for 5 minutes or 10 minutes by hand. The dough should be stiff, and pulls away from the side of the bowl easily. Cover the dough and let the dough rise for 1 hour
Preheat the oven to 450 degrees F
Divide Remove the dough from the bowl and place onto a clean countertop. Divide the dough into 8 pieces (just cut it with a knife).
Boil Combine the water and baking soda and bring to a boil on the stove.
Shape Roll each of the eight pieces into a long rope about 20 inches long, and shape each one into a pretzel.
Dip and salt. Dip each pretzel into the soda bath for 30 seconds and place on a lined baking sheet. Sprinkle with coarse sea salt, pretzel salt or dip into Trader Joe’s Bagel Seasoning
Bake for 8-10 minutes until the pretzels are golden brown. Serve with mustard YUMM!!
