Bulghur wheat is wheat that has been partially cooked by steaming, dried, and then coarsely ground. It is also called bulgur, burghul or bulgar. It is prepared for eating by steaming or boiling. It has a nutty taste. It may be prepared like rice, for example in a pilaf. It is the main ingredient in tabbouleh (a salad of bulghur, parsley, and tomato), and is mixed with meat and onions to make kibbeh (patties or balls).
