Ingredients:
5 pounds of potatoes
2 medium onions
4 large eggs
1 cup scallions, chopped
1/2 cup bread crumbs
6 tbsp melted unsalted butter
4 tsp kosher salt
1tsp black pepper
1tsp baking powder
Neutral flavored cooking oil for shallow fry.
Steps:
Peel and shred the potatoes and onions.
Squeeze potato and onion mixture and let drain, try to remove as much moisture as possible with a cheesecloth.
Add in the eggs, bread crumbs, scallions, pepper, salt, butter, and baking powder and mix evenly.
Form into patties and shallow fry on medium-high heat.
