In the classroom, can the teacher's email address be shown to parents?
When in the classroom, the teacher can go under Administration| Configuration and check the "Display teacher's emaill address on classroom homepage". It will show in the right column where it displays the Teachers.

What can a teacher see from the students' profiles | Grades Tab?
A teacher with no additional permissions:
Sees all classes and posted grades on the grades tab and summary.
The posted grade is a link only for the classes they teach.
The class link is only available for the classes they teach.
A teacher with Student Grades permission:
The posted grade link should be available for every posted grade.
A teacher with Student Classes permission:
The class link is available for all classes.

You must be a Super User or have Classroom Mgr permissions to add additional teachers.
Go to Academic |Classroom Mgr.
Click on the class name.
Go under Administration | Teachers.
Click Manage Teachers
Check off teacher(s).
