Something I've noticed when buying parsley is that it comes in these huge bags in the store, but you usually end up only using a fraction of the bag, then stuffing it in the back of your fridge until the next obscure time you need it, which by then it has already gone bad. Well, I noticed one of these bags in the SHS fridge, and I decided to make something that actually used that insane amount of parsley. I decided to make parsley pesto, which is a great alternative if you like the pesto flavor, but you don't have basil on hand.
