This video is a how to on how my mother would make spaghetti for me for lunch when I was younger and what she still makes today for my family
My Story:Â
My mother used to pack this for me for lunch when I was young along with an apple and either Lemonade homemade, Strawberry Banana Capri Sun, or blended fruit juices from home. This recipe is all from her and she still continues to make and also taught me how to make it. I was a very picky eater when I was young, there were a lot of foods that I wouldn’t eat but this was something that I wouldn’t say no to besides eggs. For my mother to be sure that I would eat something at school, she would give me spaghetti. She doesn’t eat hot dogs with her spaghetti anymore like when she was young, she would now have smoked fish or just the spaghetti itself. I really liked hot dogs when I was young, so it was something that she did for me. As years went by, we had spaghetti for either breakfast or dinner and it would be mostly at home. I really enjoyed my mother’s spaghetti and I really enjoyed learning how to make it from her.Â
Something my mother would say to me everyday before dropping me off at school: "Love you, my sunshine"
Ingredients:
1 Box of Barilla Pasta Spaghetti
14 oz. Ragu Tomato Sauce (Traditional)Â
2 Eggs
3 Hot Dogs
1-2 Scallion
2-3 Garlic Cloves
2-3 Parsley Branches
1-2 Tomato
1 Yellow Onion
¼ to ½ of Green Bell Pepper
¼ to ½ of Red Bell Pepper
¼ to ½ of Orange Bell Pepper (Optional)
ÂĽ to 1/ of Yellow Bell Pepper (Optional)
½ - 1 tbsp. Old Bay
½ - 1 tbsp Maggi Caldo Sabor A PolloÂ
½ - 1 tbsp. Goya Adobo All PurposeÂ
â…› t. Salt
â…› t. Black Pepper
1 t. - 1 tbsp. Paprika
1 Stick of Unsalted Butter
Olive Oil
Directions:
Put the spaghetti to boil and sprinkle a little salt. After about 30 minutes, take a spaghetti and taste to see if it’s ready and also put your eggs to boil for about 30 minutes
Wash all the vegetables
Chop up scallion, parsley, and garlic really small and cut your tomatoes, onions, and bell peppers as desired
Slice up your hot dogs any way you want and once the the spaghetti is finished, drain it and get a flat potÂ
Drizzle some olive oil on medium heat and put your hot dog to fry and stir until it turns brown
Put in the seasoning (scallion, garlic parsley) to fry along with the hot dog for like 1 minute and put in your vegetables and mix them upÂ
When ready, make a hole in pot in the middle of the vegetables and pour the tomato sauce and add your dry seasoning and the one stick of unsalted butter
Check your eggs while doing this
Stir the sauce only until the dry seasoning is dissolved then mix it with the vegetables and taste to make sure that there isn’t anything missing or too much of somethingÂ
Cover for about 2 minutes and pour in your spaghetti and pick it up with a forked thong or some sort of cooking spoon that won’t break the spaghetti until ready
Eggs should be ready by then and peel of the egg shells and cut as desired
