Butter Chicken is a key component of what keeps my family together. Ever since we lived in India, my mother has been cooking different kinds of curries; however, the one that will always be a favorite is butter chicken curry. Then, when we moved to Spain, we were given a South African curry recipe by our family friends which is my personal favorite and the dish I decided to cook today.
To begin, you want to combine one tablespoon of flour, one tablespoon of curry powder, 1/4 teaspoon of garam masala, 1/4 teaspoon of cayenne pepper, 1/4 teaspoon of paprika, and 1/2 teaspoon of salt and pepper.
Then, you want to dice up two chicken breasts and rub the dry ingredients with the chicken and let the chicken absorb the spices and seasoning.
Next, you dice up an onion and cook it in a tablespoon of butter, then add the chicken.
Add a pint of chicken stock and let the chicken cook for 10 minutes
Now, while the chicken cooks let me tell you more about this dish. My family is unsure of the origin of this recipe; however, as the years went on and my taste buds grew, I assisted my mother in improving this dish. This dish is always planned days in advance as my mother gathers the ingredients from the supermarket to ensure it is extraordinary. The aroma is very sweet and the flavor of the chicken is enhanced when added on top of a platter of white rice. The dish can be extremely hot when completed; however, the spices ensure that your taste buds will be numbed, yet they will also experience multiple flavors at once.
Now, back to the recipe! Cut a lemon into quarters; then, measure a half of a cup of heavy cream. Squeeze a quarter of the lemon into the cream. Heads up, the longer you let the cream and lemon dissolve into each other the better. Just make sure you mix the lemon throughly.
*After the chicken has cooked for 10 minutes add the lemon squeeze and heavy cream mixture and cook for 10 minutes*
Make sure to cook some white rice while you're at it!
What I took from this dish was how it is made. Usually at home, my mother cooks this while I am at soccer practice and I never took into consideration the effort that went into making this. It was really fun cooking this.
Now spoon out the curry and white rice onto a plate or bowl. Bon Appetit!
