My Scratch 3 project this year was a 5-channel music synthesizer which can record and play the recordings. I chose to make this because I was intrigued by the music plugin's abilities. The main problem in my project was the note timing for recording and playback. Everything else was relatively simple. I finally overcame the timing issue by basing playback based on the amount of milliseconds in between notes.
I really enjoyed doing this project. In general, I was a big fan of Scratch 3. I appreciate the modernized UI and addition of new plugins for projects, such as the text to speech plugin. With these things going for it, I would much prefer it over the previous versions of Scratch. However, I do not like how they removed/limited a lot of functions such as the customization of variable sliders. In general, I did enjoy making this project because it refreshed my knowledge about Scratch.
