Interview Summary: Since 2016, Jarle Lillemoen has served as the head brewer and manager of Wild Bunch Brewing Company in the small community of Red Rock, Texas. He began home brewing in the early 90s while pursuing his PhD in biochemistry. In this interview he covers his work at Wild Bunch, including the tasks he does on a daily basis, his equipment and brewing process, adapting his brews to his customer base, and the brewery’s place in the community. He also describes challenges and successes around staffing, current craft brewing regulations, Wild Bunch’s membership in the Texas Craft Brewer’s Guild, and the Guild’s lobbying efforts in the 89th legislative session.
