· 1 tbsp olive oil
· 1 onion, chopped
· 1 clove garlic, minced
· 1 tbsp curry powder
· 1 can chickpeas, drained
· 1 cup tomato puree
· 1/2 cup coconut milk
· Salt and pepper to taste
1. Sauté onion and garlic in oil for 3 minutes.
2. Add curry powder and stir for 30 seconds.
3. Add chickpeas, tomato puree, and coconut milk.
4. Simmer for 15 minutes. Season to taste and serve with rice.
